Gluten free is the way to be.. (for some)

So… I have been meaning to blog about this a month or more ago.. but with all the craziness of the move etc. I have not had a chance.. so… Here we go!!

Remember this…. Gluten Free Expo?

Well, I have been meaning to chat about a few of the vendors that were there.. a few in specific. I will chat about 1 today and another later this week that I am actually reviewing the product! ๐Ÿ™‚

Today I will talk to you about something called… GFREE CONNECT. Visit the website… HERE!! PICK ME!!

I met this wonderful lady at the Expo and she was advertising her own business that her and her husband started and I think it is BRILLIANT!!
What she basically does is…

  • Charge a flat rate..
  • For a box of samples..
  • So you can try it..
  • before you buy a BIG box of it..
  • and find out you dont like it..
  • and as you know…
  • being gluten free
  • can cost more than the NORM. ๐Ÿ™‚
  • So, this could save you money too!
  • You also receive coupons within
  • AND info about the products…
This is an idea of what would come in the box! ๐Ÿ™‚
I think this is the BEST idea ever!!

Howdy Everyone! Sorry for the MIA on Monday!

This week is crazy and I don’t have access to fast internet!!

I asked my friend Marie from the Troy Gardens to write a lovely post and it is great!

Hey guys! I’m Marie, Liz’s friend from the kids garden.

Liz asked me to

write a guest entry about gluten free eating. So…. here it goes!!!

ย Since day one I’ve always had stomach/intestine issues (my mom can

validate that… sorry mom).ย  We couldn’t pinpoint a reason why my tummy

ย always hurt until….I graduated from high school!! At that time a few

of my cousins got diagnosed with Celiac disease and I got tested too. I

don’t have Celiac disease, but I do have a gluten sensitivity. Ever

since then I’ve been doing my best to avoid eating gluten products..and

my tummy thanks me!!!

Here are some ways I keep myself sane while abstaining from gluten:

  • ย -remind myself of the consequences from eating gluten (bloating, tummy
  • ache, a long time in the bathroom etc…) general feelings of discomfort
  • – eat Greek yogurt (cough Fage cough)
  • – snack on fruits, nuts, and almond butter
  • – always keep gf pasta, gf bread (Udi’s brand is my fav), and quinoa in my cupboard

ย  ย  ย  ย  ย  ย  ย  ย  -thanks to the Gluten Free Expo for filling up my

pantry…best day ever!!!!

  • – remind myself of the consequences a few more times
  • – read gf blogs and cookbooks to get new recipes!
  • – have fun with cooking, and learn how to use new foods..every day is a new challenge and I love it!
  • – think about the consequences a few more times

Just for kicks here’s a yummy quinoa recipe (I brought this to a potluck with all of the garden girls!)

This ancient grain is packed with fiber and

protein, is gluten-free and is as adaptable as pasta or rice.

Quinoa cooks up just as easily as rice and from there the options are

ย endless. My recent favorite quinoa-based dish was delightful little

salad that consisted of 1 1/2 cups quinoa, 1 can black beans, 2 small

zucchinis that were sliced then grilled with olive oil and salt and

pepper.

I tossed in some roasted pepper, finely minced garlic (one

healthy size clove), a handful of chopped cilantro and a good amount of

fresh feta (cotija would have also been a lovely choice). A squeeze of

fresh lime juice and lime wedges served along the side and this salad

was as pleasing in my belly as it was to my eyes.

Well,

I hope everyone had a great weekend! Mine was verrry nice.. super busy… yet rewarding all at the same time!! You all saw how succesful I was at the gluten free expo….:)

Well, one of my success stories starts right now….

I saw a little stand with this little treat here that I have never tried before…

Well, I cracked open one of these babies only to find that they are absolutley delicious!! ๐Ÿ™‚ They have been around since 1995!! Where have I been??

They are great pick me up snacks after a workout or just for a sweet tooth!! ๐Ÿ™‚

Mmm.. look at all those sweet crunchy little sesame seeds!!

Hey everyone…

Sorry for the MIA action on friday! I was super busy and my schedule was a little different than usual so it goofed me up! It was a good friday though and we had a delicious potluck at the garden.. even though it was our last day.. ๐Ÿ˜ฆ I will tell you more about it!!

But today on the other hand was AMAZING!! Woke up super early because my body just doesn’t feel like I should sleep past 7.. but its okay!! ๐Ÿ™‚

Went straight to the gym after a quick little bowl of Erewhon rice crispies with a little bittie bit of milk! (I dont like to put liquid in my belly before I workout)

I let that sit for a 1/2 hour then ran straight to the gym! ๐Ÿ™‚ (Even though I had a great 6 mile run mapped out for today, Ms. Mother Nature got in the way! )

After my crazy good workout, I ran back home through the rain and got ready for my day with a delish breakfast and shower!! ๐Ÿ™‚

Tip – If you come at the end… (at your own risk) You could possibly leave with A TON because the vendors don’t want to package it up and take it back with them… but it is a risk because it could also ALLL be gone!

After the expo….
Marie and I mosied on over to Costco to get some staples! Faye and Cottage Cheese!!

We then found our way over to Willy Street and got a few goodies!

They didn’t have my granola on sale anymore :(.. so I left empty handed.. minus our splurge!!

Yay!! Cheers to our day and all of our adventures!! ๐Ÿ™‚
I will miss my friend Marie! She is sooo wonderful and super silly and we have lots in common!
She will hopefully come and play with me when I move back to S.F! ๐Ÿ™‚
