AND… it has a holiday Candy involved too!!
This cake is revolved around a seasonal candy which is why I want to share it with you! (Christmas is in about 2.5 weeks… 🙂
Some May call it Coffee crunch candy… we call it sponge candy in the midwest!

It is a well known cake in the bay area from a special bakery called Blums!
This cake is beautiful, as well as delicious!
This recipe is the real deal so I would take notes! 🙂

Here we go….
Blum’s Coffee Crunch Cake
1.25 c. cake flour
3/4 c. sugar
1/2 t. salt ——-> Sift first 3 ingredients together and reserve
1/4 c. sugar ——> whip next 2 ingredients until thick and pale
1/4 c. water —–> slowly add to yolk mixture and whip 4 minutes until thickened
1 c. egg whites (7-8) —–> whip to frothy on top (little bubbles)
1 t. cream of tartar —–> add to frothy whites and whip to stiff peak
1/2 c. sugar —> slowly add to above and whip to stiff peak
1 t. vanilla
1 T. lemon juice
1 t. lemon zest —–> whisk last 3 into whites
– Fold whites into yolks
– Add 1/3 of dry ingredients at a time, folding in gently until combined.
– Pour batter into ungreased 10″ tube pan.
– Bake at 350 for 50-55 minutes
**If you don’t want to buy the candy, you can make it home made!
Coffee Crunch Candy
1 T. baking soda – sifted —-> set aside
1/4 c strong brewed coffee
1.5 cups sugar
1/4 c. light corn syrup —-> Bring last 3 ingredients to Boil and cook to 290 degrees. Removed from heat and stir in baking soda. Pour immediately on greased baking sheet. Let cook completely!
6 cups heavy cream
6 T sugar
1 T vanilla —-> Whip 3 ingredients to stiff peak!
– Split cake into 3 layers
– Spread frosting and sprinkle with some coffee crunch in between each layer.
– Ice cake with remaining frosting and decorate with remaining candy.
