Well guys, I dove into my fridge head first last night! I pulled out a Pattie Pan squash and some yellow zucchini too and I got this wonderful recipe that I named…
Pattie Pan and Cheese ….
And it goes a little something like this
Cube up a Pattie Pan squash!
Chop up a zucchini! (Half for the sauce, half for eating in pieces)
Combine both into a microwave safe bowl and put a TINY bit of water in the bowl so the veggies will steam!
As the veggies are steaming (for 4 minutes), start some water for your orzo. Add orzo (7-8 minutes) when the water starts to boil.
As the veggies are steaming and when you are done starting your water.. 🙂 Chop up a piece of ham and saute it up till crispy! 🙂 (It’s like putting bacon on… but not 🙂 )
When the veggies in the microwave are done steaming, pull them out and mix in a little skim milk along with about 1/4 cup cheese with an emersion blender. It will become a thick sauce consistency. To add a little zing, add a dash of lawry’s salt to the sauce.
Step 7 .
When the orzo is finished add about 1/8 cup of cottage cheese to give the orzo a creamy consistency.. (without adding butter) 🙂
For a few more veggies, I steamed up some broccoli
Plate up and enjoy!!
